Apricot Roulade

Ingredients for 1 Roulade - Swiss roll
  • Pale Sponge for Swiss Rolls and Slices
  • 6 Egg white(s)
  • 130 g Sugar
  • 1 pinch(es) Salt
  • 6 Egg yolk(s)
  • 120 g Flour
  • Für die Creme
  • 125 g QimiQ Classic, unchilled
  • 50 g Icing sugar
  • 80 g Apricot jam
  • 125 ml Cream 36 % fat, whipped
  • Zum Dekorieren
  • 80 g Almond slivers
  • Apricots, cut into segments
Method
1.

Pre-heat the oven to 180 °C (conventional oven).

For the sponge base: whisk the egg whites with the sugar and salt until stiff.

Fold in the egg yolks. Sift in the flour mix well.

Line a baking sheet with baking paper and pour the mixture approx. 1 cm deep onto the baking tray.

Bake for approx. 10 minutes in the hot oven.

For the cream: whisk the unchilled QimiQ Classic smooth.

Add the icing sugar and apricot jam and mix well.

Carefully fold in the whipped cream.
9.
Spread the cream onto the sponge and roll into a roulade.
10.
Chill for at least 4 hours (preferably over night).
11.
Decorate with the almonds and apricot.
