QimiQ Whip Pastry Cream, chilled

QimiQ Classic, chilled

Fish stock

Smoked trout fillet , finely chopped

Noilly Prat/Vermouth dry

Sour cream 15 % fat, chilled
Preparation
- Lightly whip the cold QimiQ Whip with the QimiQ Classic until completely smooth, ensuring that the entire mixture is incorporated (including bottom and sides of bowl).
- Add the fish stock, trout, salt, pepper, horseradish, dill, Vermouth and lemon juice and continue to whip until the required volume has been achieved.
- Pour the mixture into small moulds lined with cling film and chill well.
