QimiQ Whip Pastry Cream, chilled
50g
Sugar
250ml
Whipping cream 35-36 % fat
2small pinch(es)
Gingerbread spice
1small pinch(es)
Cinnamon
1ea
Orange(s), juice and finely grated zest
140g
Dark chocolate (40-60 % cocoa), melted
Preparation
- Lightly whip the cold QimiQ Whip Pastry Cream with the sugar until completely smooth, ensuring that the entire mixture is incorporated (especially from bottom and sides of bowl).
- Add the yoghurt, gingerbread spice, cinnamon and orange zest and continue to whip until the required volume has been achieved.
- Fold in the melted chocolate.
- Fill the mousse into a piping bag and pipe into dessert glasses. Allow to chill for approx. 4 hours.
- Decorate as required and serve.
