Preparation
- For the pastry: whisk the egg whites with the icing sugar and vanilla sugar. Add the QimiQ Sauce Base and mix well. Fold in the flour and cocoa powder.
- Spread the mixture onto a baking sheet lined with baking paper and bake in a preheated oven at 160 °C (air circulation) for approx. 15-20 minutes.
- Crumble the cold sponge.
- For the praline mixture: bring the ingredients together to the boil and mix well with the sponge crumbs.
- Form pralines out of the mixture and roll in the grated hazelnuts.
- Store chilled.
