Ingredients

For 1775 g

  • 225g

    QimiQ Cream Base

  • 25g

    Garlic, finely chopped

  • 250g

    Onion(s), finely diced

  • 25g

    Jalapeno peppers, chopped

  • 90g

    Egg yolk(s)

  • 40g

    Soya sauce

  • 15g

    Flat-leaf parsley, chopped

  • 10g

    Basil, chopped

  • 3g

    Thyme, chopped

  • 3g

    Oregano, chopped

  • 5g

    Salt

  • 5g

    Black pepper, ground

  • 4g

    Chilli pepper powder

  • 90g

    Bread crumbs

  • 755g

    Turkey meat, minced

  • 120g

    Blue cheese min. 45 % fat , crumbled

  • 45g

    Pine nuts, toasted

  • 50g

    Raisins

  • 15ml

    Olive oil extra virgin, to drizzle

Preparation

  1. Blend the QimiQ Sauce Base with the egg yolks and soya sauce. Add the herbs, spices and bread crumbs and mix well.
  2. Add the ground turkey meat, blue cheese, pine nuts and raisins and mix until well blended.
  3. Chill the mixture for about 30 minutes.
  4. Shape into meat balls and place onto a baking sheet lined with parchment paper. Drizzle the meat balls with the olive oil and bake in a hot oven at 175° C for approx. 10-12 minutes.
