For the Schmarren

Preparation
- Preheat the oven to 180° C (conventional oven).
- For the pancake, whisk QimiQ Classic smooth.
- Add the quark, milk, egg yolks, butter and raisins and mix well.
- Whisk the egg whites stiff. Fold alternately with the flour into the pancake mixture.
- Line a baking sheet with baking paper. Pour the pancake mixture onto the baking paper and bake for approx. 30 minutes, or until golden brown.
- Allow to cool a little and chop into thick strips.
- For the stewed apricots, bring the water, sugar and lemon juice to the boil. Add the apricots, and cook until tender, stirring constantly.
