Ingredients

  • 400

    QimiQ Cream Base

  • 400g

    Beluga lentils, soaked

  • 400g

    Mountain lentils, soaked

  • 150g

    Red onion(s), chopped

  • 100ml

    Olive oil

  • 40g

    Garlic, chopped

  • 300ml

    White wine

  • 500ml

    Water

  • 2

    Bay leaves

  • 100g

    Leek, chopped

  • 100g

    Yellow carrot, peeled

  • 100g

    Carrot(s), peeled

  • 150g

    Bean shoots

  • 80ml

    Olive oil

  • Salt, to taste

  • Black pepper, freshly ground

  • 30g

    Flat-leaf parsley, fresh

  • 400g

    Shrimps, ready to eat

Preparation

  1. Rinse the soaked lentils and drain.
  2. Fry the onions in olive oil until translucent. Add the garlic and lentils and fry until glassy.
  3. Douse with the white wine and reduce by half. Add the water and cook until the lentils are tender.
  4. Fry the vegetables in olive oil and add to the lentils.
  5. Finish with the QimiQ Cream Base (previously QimiQ Sauce Base), season to taste and add the parsley.

  6. Serve with the shrimps.
