Ingredients

For 4 portions

  • 250g

    QimiQ Cream Base

  • 130ml

    Milk

  • 130

    Whipping cream 36 % fat

  • 4

    Egg yolk(s)

  • 90g

    Sugar

  • 1package

    Vanilla sugar

  • 1small pinch(es)

    Cinnamon, ground

  • 2small pinch(es)

    Gingerbread spice

  • 1

    Orange(s), finely grated zest

  • 2cl

    Amaretto

  • Brown sugar, to caramelise

Preparation

  1. Preheat the oven to 120 °C (air circulation).
  2. Mix the QimiQ Cream Base with the remaining ingredients.
  3. Fill the mixture into moulds and bake in the preheated oven in a water bath for approx. 60 minutes until firm.
  4. Sprinkle with brown sugar and caramelize with a mini blow torch or under a hot grill.
