For 1 x 1 litre iSi Gourmet Whip

QimiQ Classic
220g
Egg yolk(s)
50ml
White wine reduction
440g
Butter, melted
14g
Salt
Pepper, to taste
Preparation
- Blend all of the ingredients in a liquidizer and strain through a fine sieve.
- Pour into a 1 litre iSi Gourmet Whip and screw in two chargers.
- Keep in a hot water bath at a maximum temperature of 60 °C.
- Shake well and serve.
