For the sauce

QimiQ Cream Base
60ml
Olive oil

Red onion(s), cut into strips
250g
Carrot(s), finely shredded
300g
Celeriac, finely shredded
300g
Courgette(s), finely shredded
250ml
White wine
40g
Chives, finely sliced
Salt and pepper
Preparation
- Cook the spaghetti al dente in salted water.
Fry the onions and vegetables in hot olive oil. Douse with the white wine.
Stir in the QimiQ Sauce Base and bring to the boil briefly.
- Season to taste and finish with the chives.
- Toss the spaghetti in the vegetable sauce and serve immediately.
Tip: Refine with grated Parmesan.
