Ingredients

    QimiQ Cream Base

  • 1

    Whole goose [3.5 kg]

  • 4

    Egg(s)

  • 200g

    Chestnuts, cooked

  • 400g

    Brioche, diced

  • 200g

    Apple(s), finely diced

  • 1pinch(es)

    Salt

  • 1pinch(es)

    Pepper, rubbed

  • 1tsp

    Marjoram

  • 1heaped tbsp

    Flat-leaf parsley, finely chopped

  • 50g

    Butter, melted

Preparation

  1. Add the eggs, chestnuts, brioche and apple and mix well.
  2. Season with salt, pepper, marjoram and parsley.
  3. Stuff the goose with the stuffing, sew up the opening and bake until tender at medium heat for 2-3 hours (depending on the size).
