Pumpkin Bacon Tart

Ingredients

For 1 cake tin 26 cm Ø

  • 125g

    QimiQ Classic

  • 730g

    Pumpkin, diced

  • 20g

    Butter

  • 1tbsp

    Sugar

  • 80ml

    Orange juice

  • 0.5

    Orange(s), finely grated zest

  • 1small pinch(es)

    Ginger root, finely chopped

  • 120ml

    Vegetable stock

  • 100g

    Streaky bacon, finely diced

  • Salt and pepper

  • 1package

    Fresh savoury shortcrust pastry

Preparation

  1. Preheat the oven to 180 °C (conventional oven).
  2. Sauté the pumpkin in the butter. Add the sugar, orange juice, orange zest, ginger and vegetable stock and allow to simmer until the pumpkin is soft.
  3. Blend the pumpkin smooth. Season to taste and refine with QimiQ Classic. Fold in the bacon cubes.
  4. Place the shortcrust pastry into a greased cake tin and pour in the pumpkin puree.
  5. Bake in the preheated oven for approx. 35 minutes.
