For the dumplings

QimiQ Classic, unchilled
50g
Sugar
125ml
Buttermilk
1dash of
Lemon juice
For the soup
300g
Mixed berries, fresh
1dash of
Lemon juice
150ml
Apple juice
150ml
Orange juice
Preparation
- For the dumplings: whisk QimiQ Classic smooth.
- Add the butter milk and lemon juice and mix well.
- Chill for at least 6 hours, or until the mixture is solid.
- For the soup, blend the berries, lemon juice, apple juice and orange juice until smooth.
- Arrange the fruit soup in dishes. Form dumplings out of the solid butter milk mixture with two teaspoons and place in the fruit soup.
