Smoked Salmon Mousse

Ingredients for 4 portions
  • 250 g QimiQ Whip Pastry Cream (previously QimiQ Whip), chilled
  • 100 g Fish stock, or vegetable stock
  • 200 g Smoked salmon, pureed
  • 0.5 g Lemon(s), juice only
  • Salt
  • White pepper
Lightly whip the cold QimiQ Whip until completely smooth and ensure that the entire mixture is incorporated (especially from bottom and sides of bowl).
Add the fish stock or vegetable stock and salmon and continue to whip until the required volume has been achieved.
Add the lemon juice, season to taste and mix well. Chill for approx. 4 hours.

Tip: Refine the mousse with fresh coriander.
