For the pita bread

Divina Greek olives, finely sliced

Preparation
- For the pita bread: whisk the unchilled QimiQ Classic smooth. Add the warm water, olive oil and instant yeast and mix well. Mix the whole wheat flour with the salt and sugar and mix to the QimiQ mixture. Allow to rest covered for approx. 15 minutes.
- Add the remaining flour and knead to a smooth dough. Cover and allow to rest over night in a warm place.
- Form the dough and bake at 240 °C on a stone in the oven.
- For the tapenade: whisk the unchilled QimiQ Classic smooth. Add the remaining ingredients and mix well. Season to taste with salt and pepper.
- Serve the pita bread with the olive tapenade.
