Butter

Onion(s), finely chopped
450g
Tomatoes, puréed
500ml
Clear vegetable stock
Salt and pepper
1tsp
Sugar
To garnish

Tomato(es), cored
Basil leaves
Preparation
- Fry the onion in butter until soft and add the puréed tomatoes.
- Douse with the stock and bring to the boil.
- Using an immersion mixer, blend until smooth.
- Refine with the QimiQ Sauce Base.
- Season to taste and serve garnished with tomato segments and basil leaves.
