Ingredients

For 10 portions

  • For the Rabbit

  • 1500

    Saddle of Rabbit

  • For the Marinade

  • 125ml

    Olive oil

  • 125ml

    Grape seed oil

  • 1tbsp

    Dijon mustard

  • 1

    Dry white wine

  • 1

    Thyme sprig(s)

  • 2tbsp

    Honey

  • For the Herb Panna Cotta

  • 500g

    QimiQ Classic, unchilled

  • 180ml

    Milk

  • 200g

    Sheep’s cream cheese

  • 4tbsp

    Mixed herbs, finely chopped

  • 1tbsp

    Olive oil

  • Salt

  • Black pepper

  • 1dash of

    White balsamic vinegar

Preparation

  1. For the rabbit: Mix all the ingredients for the marinade together with a handheld mixer. Marinate the rabbit for 24 hours.

  2. For the herb panna cotta: whisk the QimiQ Classic smooth and add the remaining ingredients. Chill at least 4 hours (preferably overnight).

  3. Take the rabbit out of the marinade and sear on both sides. Finish in the oven.

  4. Serve the rabbit with the panna cotta.
