Preparation
For the rabbit: Mix all the ingredients for the marinade together with a handheld mixer. Marinate the rabbit for 24 hours.
For the herb panna cotta: whisk the QimiQ Classic smooth and add the remaining ingredients. Chill at least 4 hours (preferably overnight).
Take the rabbit out of the marinade and sear on both sides. Finish in the oven.
Serve the rabbit with the panna cotta.
