Chocolate Cream with Cherries

Ingredients for 10 portions
  • 500 g QimiQ Whip Chocolate, chilled
  • For the cherry compote
  • 400 g Cherries, tinned
  • 20 g Corn flour / starch
  • 60 g Sugar
  • Decoration
  • Chocolate flakes
Method
1.
Whip the cold QimiQ Whip Chocolate until the required volume has been achieved.

Drain the cherries. Mix the starch to a smooth paste with 4 rbsp. of the cherry juice and set aside. Bring the remaining juice and sugar to the boil in a sauce pan.

Add the starch paste to the juice stirring continuously, and allow to cook for a further 2 minutes. Add the cherries and allow to cool.

Pipe the chocolate cream into glasses layering alternately with the cherry compote.

Allow to chill for approx. 4-6 hours.

Decorate with chocolate flakes.
