Ingredients for 1 kg
  • 660 g QimiQ Cream Base
  • 130 g QimiQ Classic, unchilled
  • 100 g Whipping cream 35-36 % fat
  • 85 g Sugar
  • 20 g Pasteurized egg yolks
  • 15 g Rum
  • 2 g Vanilla bean
Method
1.

Whisk the QimiQ Classic smooth.

2.

Add the remaining ingredients, mix well and chill.

3.

Tip: use vanilla aroma to taste instead of vanilla pods as required.

Tip: Use as lava cake filling. Cut out the centre of a sponge and fill the cream into the well.
