Ingredients

For 4 portions

  • 250g

    QimiQ Cream Base, chilled

  • 1ea

    Onion(s), finely chopped

  • 1tbsp

    Butter

  • 50g

    Root vegetables, finely diced

  • 450g

    Tomatoes, tinned, = 1 tin [tuna]

  • 1tbsp

    Tomato paste

  • 500ml

    Clear vegetable stock

  • 1tsp

    Sugar

  • 1pinch(es)

    Salt and pepper

  • 1twig(s)

    Thyme

  • 1ea

    Garlic clove(s), finely chopped

Preparation

  1. Lightly fry the onion and root vegetables in butter until soft.
  2. Add the tomatoes and tomato puree.
  3. Stir in the vegetable stock and season to taste. Bring to the boil, reduce the heat and simmer until tender.
  4. Blend the soup and finish with the cold QimiQ Classic.
