Onion(s), finely sliced

Red pepper(s), diced

Butter

Pumpkin, peeled, cored, diced

White wine
500ml
Vegetable stock
Salt and pepper
Ground nutmeg, grated
Preparation
- Sauté the onion and red pepper in butter.
- Add the pumpkin and fry lightly. Douse with the white wine.
- Add the vegetable stock and allow to simmer covered for approx. 20 minutes.
- Add the QimiQ Cream Base and season with salt, pepper and nutmeg.
- Blend smooth using an immersion blender.
Hints
- Refine with a dash of pumpkin seed oil.
