Chocolate Espuma in the iSi Gourmet Whip

Ingredients for 1 x 0.5 litre iSi Gourmet Whip
  • 100 g QimiQ Classic
  • 100 ml Cream 36 % fat
  • 100 ml Milk
  • 100 g Dark chocolate (40-60 % cocoa), melted
  • 30 g Sugar
  • 20 ml Rum
Method
1.
Blend the ingredients together until smooth and strain through a fine sieve.
2.
Pour into a 0.5 litre Gourmet Whip. Screw in one charger, shake well and chill.
3.
Shake well before serving.
