Ingredients

For 1 Cake tin 26 cm Ø

  • 1package

    Danish pastry dough, fresh

  • For the filling

  • 125g

    QimiQ Cream Base, unchilled

  • 250g

    Low fat quark [cream cheese]

  • 1package

    Vanilla sugar

  • 50g

    Sugar

  • 1ea

    Lemon(s), juice and finely grated zest

  • 3

    Egg yolk(s)

  • 25g

    Corn flour / starch

  • 3

    Egg white(s)

  • 50g

    Sugar

  • 5

    Ladyfingers, crumbled

  • 400g

    Cherries, cored

  • 2tbsp

    Sugar

  • 1tbsp

    Corn flour / starch

Preparation

  1. Preheat the oven to 170 °C (conventional oven). Prepare the pastry according to the instructions on the packet and cut into a square.
  2. Grease a cake tin or tart form and line with the pastry, forming a rim approx. 3 cm high.
  3. For the filling: whisk the unchilled QimiQ Classic smooth. Add the quark, vanilla sugar, sugar, lemon zest, egg yolks and corn flour and mix well.
  4. Whisk the egg whites with the sugar until stiff and fold into the QimiQ mixture.
  5. Sprinkle the lady finger crumbs on the pastry base.
  6. Mix the cherries with sugar and corn flour and arrange on the crumbs on the pastry base. Pour the QimiQ mixture over the cherries and bake in the pre-heated oven for approx. 60-70 minutes.
