Caramel Mousse with Macchiato Espuma

Ingredients for 20 portions
  • For the mousse
  • 375 g QimiQ Whip, chilled
  • 180 g Caramel
  • 270 ml Milk
  • For the espuma
  • 230 ml Caffè Latte Macchiato
  • 30 ml Coffee liqueur
  • 7 g Gelatine sheets à 3 g
Method
1.
For the mousse, lightly whip the cold QimiQ Whip until completely smooth and ensure that the entire mixture is incorporated (especially from bottom and sides of bowl).

Add the caramel and milk and continue to whisk at top speed until the required volume has been achieved. Chill for at least 4 hours (preferably over night).
3.
For the espuma, dissolve the sheets of gelatine. Add to the liqueur, warm up and mix well with the Caffé Latte. Pour into a 0,5 litre iSi Gourmet Whip, screw in 1 charger and shake well. Chill.
