Smoked salmon, pureed

Tomato paste
177ml
Fish stock

Wasabi, ground
59ml
Lemon juice
207ml
Milk
Salt and pepper

QimiQ Whip, room temperature
Preparation
- Blend the salmon puree, tomato paste, fish stock, wasabi, lemon juice and milk smooth and season to taste.
- Add the QimiQ Whip and blend until completely smooth (strain if necessary).
- Pour into a 1 L iSi Gourmet Whip, screw in one charger.
- Shake well before serving.
