QimiQ Sauce Base

Onion(s), finely chopped
1tbsp
Butter
750ml
Clear vegetable stock
300g
Zucchini, diced
Salt
Pepper
1tbsp
Mixed herbs, finely chopped
Preparation
- Fry the onion in butter until soft.
- Douse with the vegetable stock and bring to the boil.
- Add the courgettes and continue to cook until tender.
- Stir in the QimiQ Sauce Base and bring to a boil.
- Blend until frothy, season to taste and serve sprinkled with the herbs.
