Ingredients

For 1 baking tray

  • Pale Sponge for Swiss Rolls and Slices

  • 6

    Egg white(s)

  • 130g

    Sugar

  • 1pinch(es)

    Salt

  • 6

    Egg yolk(s)

  • 120g

    AP Flour, plain

  • 500g

    QimiQ Classic, room temperature

  • 100g

    Red currants

  • 100g

    Natural yogurt

  • 100g

    Powdered sugar

  • Lemon peel, finely grated zest

  • 250ml

    Heavy cream 36 % fat, beaten

  • 1sachet(s)

    Red cake glazing jelly

  • Red currants, to decorate

Preparation

  1. Double the sponge base mixture and bake on a baking sheet lined with baking paper. Allow to cool.
  2. Whisk QimiQ Classic smooth.
  3. Add the red currants, yogurt, sugar and lemon juice and mix well.
  4. Carefully fold in the whipped cream.
  5. Spread the cream on the sponge base and chill for at least 4 hours (preferably over night).
  6. Glaze with the red glazing and decorate with red currants.
