Pale Sponge for Swiss Rolls and Slices

Natural yogurt

Vanilla sugar

Powdered sugar

Heavy cream 36 % fat, beaten

Preparation
- Double the sponge base and bake on baking sheet lined with baking paper. Allow to cool.
- Whisk QimiQ Classic smooth.
- Add the yogurt, vanilla sugar, powdered sugar and coconut and mix well.
- Carefully fold in the whipped cream.
- Spread the cream on the sponge base. Decorate with the dessiccated coconut and chill for at least 4 hours (preferably over night).
