Ingredients

For 1 Roulade - Swiss roll

  • Pale Sponge for Swiss Rolls and Slices

  • 6

    Egg white(s)

  • 130g

    Sugar

  • 1pinch(es)

    Salt

  • 6

    Egg yolk(s)

  • 120g

    AP Flour

  • 125g

    QimiQ Classic, room temperature

  • 50g

    Powdered sugar

  • 80g

    Apricot jam

  • 125ml

    Heavy cream 36 % fat, beaten

  • 80g

    Almond slivers

  • Apricots, cut into segments

Preparation

  1. Bake the sponge and allow to cool.
  2. Whisk QimiQ Classic smooth.
  3. Add the powdered sugar and apricot jam and mix well.
  4. Carefully fold in the whipped cream.
  5. Spread the cream onto the sponge and roll into a roulade.
  6. Chill for at least 4 hours (preferably over night).
  7. Decorate with the almonds and apricot.
