Pale Sponge for Swiss Rolls and Slices

QimiQ Classic, room temperature

Powdered sugar

Apricot jam
125ml
Heavy cream 36 % fat, beaten

Almond slivers
Apricots, cut into segments
Preparation
- Bake the sponge and allow to cool.
- Whisk QimiQ Classic smooth.
- Add the powdered sugar and apricot jam and mix well.
- Carefully fold in the whipped cream.
- Spread the cream onto the sponge and roll into a roulade.
- Chill for at least 4 hours (preferably over night).
- Decorate with the almonds and apricot.
