Ingredients

For 10 portions

  • 250g

    QimiQ Whip, chilled

  • 250g

    QimiQ Classic, chilled

  • 125ml

    Fish stock

  • 200g

    Smoked trout fillet , finely chopped

  • 1pinch(es)

    Salt

  • 1pinch(es)

    Pepper

  • 1tbsp

    Horseradish, finely grated

  • 1tsp

    Dill, finely chopped

  • 1dash of

    Vermouth dry

  • 1dash of

    Lemon juice

  • 150g

    Sour cream 15 % fat, chilled

Preparation

  1. Lightly whip the cold QimiQ Whip with the QimiQ Classic until completely smooth, ensuring that the entire mixture is incorporated (including bottom and sides of bowl).
  2. Add the fish stock, trout, salt, pepper, horseradish, dill, Vermouth and lemon juice and continue to whip until the required volume has been achieved.
  3. Pour the mixture into small molds lined with cling film and chill well.
