Smoked Trout Mousse with Horseradish

Ingredients for 10 portions
  • 200 g QimiQ Whip, chilled
  • 200 g QimiQ Classic, chilled
  • 100 ml Fish stock
  • 200 g Smoked trout fillet , finely chopped
  • Salt
  • Pepper
  • Horseradish
  • 1 tbsp Dill
  • 1 Vermouth dry
  • Lemon juice
Lightly whip the cold QimiQ Whip with the QimiQ Classic until completely smooth, ensuring that the entire mixture is incorporated (including bottom and sides of bowl).
Add the fish stock, trout, salt, pepper, horseradish, dill, Vermouth and lemon juice and continue to whip until the required volume has been achieved.
Pour the mixture into small molds lined with cling film and chill well.
