QimiQ Sauce Base

Onion(s), finely chopped
1tbsp
Butter
500g
Celeriac, peeled, diced
750ml
Vegetable stock
1tbsp
Balsamic vinegar
Salt and pepper
Preparation
- Fry the onion in butter until soft. Add the celeriac and sauté with the onion.
- Douse with the stock, season with the vinegar, salt and pepper and continue to cook until soft.
- Blend the soup. Add the QimiQ Sauce Base and bring back to the boil.
- Season to taste and serve immediately.
