QimiQ Sauce Base

Onion(s), minced

Quinces, fresh, peeled

Parsnips, fresh, peeled

Apple(s), cored

White wine

Balsamic vinegar, white

Clear vegetable stock
1small pinch(es)
Cloves, ground
Salt and pepper
Nutmeg, ground
Preparation
- Sauté the onions in butter, add the quinces, parsnips and apples and fry until transparent.
- Douse with the white wine and Balsamic vinegar and cook until reduced.
- Add the vegetable stock and spices and cook until the fruits and vegetables are soft.
- Using an immersion mixer, blend the soup until smooth.
- Stir in the QimiQ Sauce Base and continue to cook until the required consistency has been achieved.
- Blend until frothy and serve garnished with fresh parsley and fried parsnip chips.
