Ingredients

  • 300g

    QimiQ Sauce Base

  • 15g

    Butter, unsalted

  • 35ml

    Olive oil

  • 450g

    Red onion(s), julienne

  • 600g

    Chicken breast fillet

  • 5g

    Salt

  • 5g

    Black pepper, ground

  • 25g

    Garlic, squeezed

  • 7g

    Rosemary, finely chopped

  • 500g

    Orecchiette Pasta

  • 100g

    Nueske`s Applewood Smoked Bacon, finely shredded

  • 75g

    Tomato(es), peeled

  • 45g

    Kalamata olives, minced

  • 150g

    Point Reyes Blue Cheese

  • 15g

    Green onion(s), finely shredded

Preparation

  1. Melt the butter and some olive oil in a sauté pan. Add the red onions, season with the salt and pepper, caramelize and set aside.
  2. Season the chicken breast meat with the salt and pepper and sauté with the garlic and rosemary until almost done. Set aside and allow to rest.
  3. Cut the chicken into 1/4 inch strips and set aside.
  4. Bring a pot of salted water to a boil and cook the pasta al dente.
  5. Sauté the bacon. Add the caramelized onions, tomatoes, blue cheese, QimiQ Sauce Base and chicken.
  6. Strain the pasta and add to the mixture. Gently toss all the ingredients together, adjust the seasoning and sprinkle with the green onions.
