Ingredients

For 1448 g

  • 200g

    Sugar

  • 250ml

    Orange juice

  • 340g

    Cranberries

  • 10g

    Orange zest

  • 2g

    Cinnamon, ground

  • 0.5g

    Nutmeg, ground

  • 1g

    Cardamom, ground

  • 0.25g

    Cayenne pepper, ground

  • For the mayonnaise

  • 250g

    QimiQ Classic, room temperature

  • 35g

    Egg yolk(s)

  • 45g

    Dijon mustard

  • 20ml

    White balsamic vinegar

  • 125ml

    Vegetable oil

  • 150g

    Sour cream 10 % fat

  • 20ml

    Lemon juice

  • Salt

  • White pepper, ground

  • Worcestershire sauce

  • Red pepper flakes

Preparation

  1. Place the sugar, orange juice and cranberries into a pot and bring to a boil. Simmer until the cranberries burst.
  2. Add the orange zest, cinnamon, nutmeg, cardamom, cayenne pepper and set aside to cool. Keep refrigerated until needed.
  3. For the mayonnaise: place the QimiQ Classic, egg youlks, mustard and balsamic vinegar into a food processor and blend until smooth.
  4. Slowly add the oil until well blended.
  5. Add the rest of the ingredients and blend. Keep refrigerated until needed.
