Ingredients

  • For the chocolate nut cake

  • 125g

    QimiQ Sauce Base

  • 125g

    Butter

  • 6

    Egg yolk(s)

  • 90g

    Hazelnuts, ground

  • 250g

    Dark chocolate (40-60 % cocoa), melted

  • 6

    Egg white(s)

  • 70g

    Sugar

  • For the vanilla cream

  • 125g

    QimiQ Classic Vanilla, room temperature

  • 250

    Whipping cream 36% fat

  • 1

    Vanilla pod(s), pulp only

  • 70g

    Sugar

Preparation

  1. For the chocolate nut cake: whisk the butter until fluffy. Slowly add the egg yolks and continue to whisk until fluffy.
  2. Add the QimiQ Sauce Base, hazelnuts and melted chocolate and mix well.
  3. Whisk the egg whites with the sugar until fluffy and fold into the mixture.
  4. Spread the pastry onto a baking tray lined with baking paper and bake in a preheated oven at 340 °F for approx. 35 minutes.
  5. For the vanilla cream: whisk the unchilled QimiQ Classic Vanilla smooth. Add the cream, vanilla pulp and sugar and whik on middle speed until stiff.
  6. Portion the cake. Fill the cream into a piping bag and pipe onto the cake.
