Ingredients

For 1 x 2 pint [1 litre] iSi Gourmet Whip

  • 220g

    QimiQ Classic

  • 220g

    Egg yolk(s)

  • 50ml

    White wine reduction

  • 440g

    Butter, melted

  • 14g

    Salt

  • Pepper, to taste

Preparation

  1. Blend all of the ingredients in a liquidizer and strain through a fine sieve.
  2. Pour into a 1 litre iSi Gourmet Whip and screw in two chargers.
  3. Keep in a hot water bath at a maximum temperature of 140 °F.
  4. Shake well and serve.
