Ingredients

    Whole goose [3.5 kg]

  • 250g

    QimiQ Sauce Base

  • 2

    Egg(s)

  • 200g

    Chestnuts, cooked

  • 300g

    Brioche, diced

  • 200g

    Apple(s), finely diced

  • 100g

    Foie gras[goose liver]

  • 1pinch(es)

    Salt and pepper

  • 1tsp

    Marjoram, rubbed

  • 1heaped tbsp

    Parsley, finely chopped

Preparation

  1. Add the eggs, chestnuts, brioche, apple and foie gras and mix well.
  2. Season with salt, pepper, marjoram and parsley.
  3. Stuff the goose with the stuffing, sew up the opening and bake tender at medium heat for 2-3 hours (depending on the size).
