Ingredients for 1 Roulade - Swiss roll

  • 6 Egg white(s)
  • 130 g Sugar
  • 1 pinch(es) Salt
  • 6 Egg yolk(s)
  • 120 g Flour, plain
  • For the filling
  • 250 g QimiQ Whip, chilled
  • 150 g Mascarpone
  • 4 tsp Instant coffee powder
  • 80 g Sugar
  • 60 ml Milk
  • 2 cl Amaretto
  • 150 g Chocolate
Preheat the oven to 350 °F (conventional oven).
For the base: whisk the egg whites with the sugar and salt until fluffy. Fold in the egg yolks. Carefully mix in the flour.

Eigelb unterheben, Mehl dazusieben und vorsichtig mischen.

Spread the mixture onto a baking tray lined with baking paper and bake in the preheated oven for approx. 10 minutes. Allow to cool.

Im vorgeheizten Backofen ca. 10 Minuten backen.

For the filling: whisk the cold QimiQ Whip until completely smooth, ensuring that the mixture is completely incorporated (especially the bottom and sides of bowl).
Add the mascarpone, instant coffee powder, sugar, milk and Amaretto and continue to whip until the required volume has been achieved. Fold in the melted chocolate.
Spread 2/3 of the cream onto the sponge and roll into a roulade. Spread the remaining cream on top and decorate with chocolate flakes.
Allow to chill for approx 4 hours.
