Ingredients

For 1 Roulade - Swiss roll

  • 6

    Egg white(s)

  • 130g

    Sugar

  • 1pinch(es)

    Salt

  • 6

    Egg yolk(s)

  • 120g

    AP Flour, plain

  • For the filling

  • 250g

    QimiQ Whip, chilled

  • 150g

    Mascarpone

  • 4tsp

    Instant coffee powder

  • 80g

    Sugar

  • 60ml

    Milk

  • 2cl

    Amaretto

  • 150g

    Chocolate

Preparation

  1. Preheat the oven to 350 °F (conventional oven).
  2. For the base: whisk the egg whites with the sugar and salt until fluffy. Fold in the egg yolks. Carefully mix in the flour.
  3. Spread the mixture onto a baking tray lined with baking paper and bake in the preheated oven for approx. 10 minutes. Allow to cool.
  4. For the filling: whisk the cold QimiQ Whip until completely smooth, ensuring that the mixture is completely incorporated (especially the bottom and sides of bowl).
  5. Add the mascarpone, instant coffee powder, sugar, milk and Amaretto and continue to whip until the required volume has been achieved. Fold in the melted chocolate.
  6. Spread 2/3 of the cream onto the sponge and roll into a roulade. Spread the remaining cream on top and decorate with chocolate flakes.
  7. Allow to chill for approx 4 hours.
