Turkey Escalopes with Chanterelle Sauce

Ingredients for 4 portions
  • 4 Turkey escalopes 150 g each
  • Salt and pepper
  • Olive oil, to fry
  • For the sauce
  • 125 g QimiQ Classic, chilled
  • 30 g Shallot(s), finely chopped
  • 2 tbsp Butter
  • 400 g Chanterelles
  • 1 tbsp AP Flour
  • 300 ml Clear vegetable stock
  • Salt and pepper
  • 1 tbsp Parsley, finely chopped
Method
1.
For the sauce, fry the shallots in butter until soft. Add the chanterelles and continue to fry for a further 3 minutes. Dust with flour, douse with the stock and season to taste. Continue to cook until the chanterelles are tender to the bite.

Finish with the cold QimiQ Classic and keep warm.

Season the turkey with salt and pepper. Fry for 2 minutes on each side in hot oil.

Serve with the chanterelle sauce and sprinkle with parsley.
