QimiQ Whip, chilled

Fish stock, or vegetable stock

Smoked salmon, pureed
0.5g
Lemon(s), juice only
Salt
White pepper
Preparation
- Lightly whip the cold QimiQ Whip until completely smooth and ensure that the entire mixture is incorporated (especially from bottom and sides of bowl).
- Add the fish stock or vegetable stock and salmon and continue to whip until the required volume has been achieved.
- Add the lemon juice, season to taste and mix well. Chill for approx. 4 hours.
