Ingredients

For 4 portions

  • 150g

    QimiQ Sauce Base

  • 70ml

    White wine reduction

  • 1

    Egg yolk(s)

  • 400g

    Clarified butter

  • 1

    Lemon(s)

  • 1

    Salt and pepper

  • 1kg

    Green asparagus

  • Salt

  • 200g

    Ham, sliced

  • 150g

    AP Flour

  • 2

    Egg(s)

  • 300g

    Bread crumbs

  • 150ml

    Vegetable oil, to fry

  • Parsley, finely chopped

  • Chives, finely chopped

Preparation

  1. Remove the ends of the asparagus (approx. 1-2 cm) and cook in salted water until soft. Remove from the boiling water and quench with cold water.
  2. Wrap the asparagus in the ham slices, and bread with the flour, eggs and bread crumbs. Fry in hot oil until golden brown.
  3. Heat the QimiQ Sauce Hollandaise. Refine with the fresh herbs and serve with the asparagus rolls.

Hints

  • Serve with fresh garden lettuce.
