Ingredients

For 10 servings

  • For the pavlovas

  • 5

    Egg white(s)

  • 130g

    Sugar

  • Salt

  • 1dash of

    Lemon juice

  • 1small pinch(es)

    Cinnamon

  • For the mousse

  • 250g

    QimiQ Classic, room temperature

  • 200g

    Mascarpone

  • 150g

    Plums, pureed

  • 100g

    Sugar

  • 250ml

    Whipping cream 36% fat, beaten

Preparation

  1. Preheat an oven to 200 °F (air circulation).
  2. For the pavlovas: whisk the egg whites with the sugar, salt, lemon juice and cinnamon until stiff. Fill into a piping bag and pipe 10 pavlovas onto a baking tray lined with baking paper. Bake in the preheated oven for approx. 90 minutes.
  3. For the mousse: whisk the unchilled QimiQ Classic smooth. Add the mascarpone, plum puree and sugar and mix well. Fold in the whipped cream and fill into a piping bag.
  4. Cut off the tips of the pavlovas and press a small hollow into the middle. Pipe the cream onto the bases and top with the cut off tips.
