Ingredients

For 10 portions

  • For the pita bread

  • 60g

    QimiQ Classic, room temperature

  • 80ml

    Water, warm

  • 40ml

    Olive oil

  • 2tsp

    Dried yeast

  • 35g

    Whole wheat flour

  • 1tsp

    Salt

  • 0.5tsp

    Sugar

  • 310g

    AP Flour

  • For the tapenade

  • 500g

    QimiQ Classic, room temperature

  • 180ml

    Olive oil

  • 180g

    Divina Greek olives, finely sliced

  • 170g

    Tomato(es), finely diced

  • 30g

    Garlic, finely chopped

  • 20g

    Basil, finely chopped

  • 10g

    Oregano, finely chopped

  • Salt and pepper

Preparation

  1. For the pita bread: whisk the unchilled QimiQ Classic smooth. Add the warm water, olive oil and instant yeast and mix well. Mix the whole wheat flour with the salt and sugar and mix to the QimiQ mixture. Allow to rest covered for approx. 15 minutes.
  2. Add the remaining flour and knead to a smooth dough. Cover and allow to rest over night in a warm place.
  3. Form the dough and bake at 475 °F on a stone in the oven.
  4. For the tapenade: whisk the unchilled QimiQ Classic smooth. Add the remaining ingredients and mix well. Season to taste with salt and pepper .
  5. Serve the pita bread with the olive tapenade.
