Smoked Chicken Wings with Garlic Parmesan Sauce

  • 30 Chicken wings, large
  • 4 QimiQ Marinade
  • Garlic & Parmesan Sauce
  • 0.5 cup(s) Butter, unsalted, melted
  • 1.5 cup(s) Parmesan
  • 0.5 cup(s) Garlic, minced
  • 0.5 cup(s) QimiQ Classic, whipped smooth
  • 0.5 tsp Onion, granulated
  • 1.5 tbsp Black pepper, ground
  • 1 cup(s) Mayonnaise, 40 % fat
  • 0.5 cup(s) Whipping cream 36% fat
Method
1.

Chicken & Brine:

  1. Soak the chicken wings in the brine for 6 hours.
  2. Rinse the chicken wings in cool water.
  3. Set the smoker to 225°.
  4. Cook the wings for 2 ½ hours.
  5. Remove and allow to cool completely.
  6. Fry at 350° for 8 minutes.
  7. Toss with the Garlic & Parmesan Sauce.

Garlic & Parmesan Sauce:

  1. In a saucepan, add the butter and garlic - Allow them to come up together till translucent slowly.
  2. Combine the mayonnaise, heavy cream, granulated onion, black pepper, and QimiQ with the garlic butter - mix till smooth.
  3. Add the parmesan.
