Cream of Pumpkin Soup

Ingredients for 4 portions
  • 250 g QimiQ Sauce Base
  • 1 Onion(s), finely sliced
  • 0.5 Red bell pepper(s), diced
  • 80 g Butter
  • 400 g Pumpkin, peeled, cored, diced
  • 125 ml White wine
  • 500 ml Vegetable stock
  • Salt and pepper
  • Nutmeg, grated
Method
1.
Sauté the onion and red bell pepper in butter.
2.
Add the pumpkin and fry lightly. Douse with the white wine.
3.
Add the vegetable stock and allow to simmer covered for approx. 20 minutes.
4.
Add the QimiQ Sauce Base and season with salt, pepper and nutmeg.
5.
Blend smooth using an immersion blender.
