Cream of Pumpkin Soup

Ingredients

For 4 portions

  • 250g

    QimiQ Sauce Base

  • 1

    Onion(s), finely sliced

  • 0.5

    Red bell pepper(s), diced

  • 80g

    Butter

  • 400g

    Pumpkin, peeled, cored, diced

  • 125ml

    White wine

  • 500ml

    Vegetable stock

  • Salt and pepper

  • Nutmeg, grated

Preparation

  1. Sauté the onion and red bell pepper in butter.
  2. Add the pumpkin and fry lightly. Douse with the white wine.
  3. Add the vegetable stock and allow to simmer covered for approx. 20 minutes.
  4. Add the QimiQ Sauce Base and season with salt, pepper and nutmeg.
  5. Blend smooth using an immersion blender.

Hints

  • Refine with a dash of pumpkin seed oil.
