Method
1.
For the soup, fry the onions and bacon in oil. Add the potatoes, douse with the stock, season to taste and continue to cook until the potatoes are tender to the bite. Blend smooth and finish with the chilled QimiQ.

For the Schlutzkrapfen dough, knead the ingredients together until smooth.

For the filling, whisk QimiQ smooth. Add the remaining ingredients and mix well.

Teig quadratisch ausrollen und halbieren. Von der Füllung walnussgroße Häufchen mit fingerbreitem Abstand auf eine der Teigplatten geben. Finger in Wasser tauchen und gitternetzartig die Zwischenräume zwischen den Häufchen anfeuchten. Mit der 2. Teigplatte abdecken und zwischen den Häufchen gut andrücken, um jeden Schlutzkrapfen zu verschließen. Mit einem runden Ausstecher Schlutzkrapfen ausstechen.
