Preheat the oven to 350 °F (convection oven).

Cook the penne for 10-12 minutes or until al dente. Drain and set aside.
Melt the butter in a saucepan and stir in the flour. Cook for 1-2 minutes.
Mix the panko bread crumbs with the cooked penne. Add the sauce and mix well.
Place in a baking pan and top with the remaining cheese and panko bread crumbs.
Bake in the preheated oven for approx. 30-45 minutes.
